Abstract

...The issue of food management is not simple, as it concerns all stages of the supply chain, starting from primary production, storage, transport, standardization, retail and consumption. According to the F.A.O. about 1.3 billion tonnes of food end up in the trash while at the same time millions of people around the world are malnourished. The problem in Europe also exists. All data and analysis across Europe estimate that, every year across the EU (including, until recently, the United Kingdom), the volume of waste and food loss reached 88 million tonnes in 2011, while, according to the latest data from the European Commission, in 2020 there was a slight reduction in waste to 87.6 million tonnes. This means that every EU citizen wastes about 173 kg of food each year. At the same time, the total amounts of food produced in EU for 2011 were around 865 kg / person; this would mean that in total we are wasting 20% of the total food produced...
